Kaima Bona Gatoi + Mock Sago Pancakes

Kaima Bona Gatoi
1/2 eggplant, roughly chopped
1 sweet potato, sliced
1 zucchini, chopped
2 onions, sliced
red and green chiles, sliced
olive oil
coriander
chili powder
generous pinch salt

Heat broiler to 450.
toss all veggies in olive oil, spices, and salt
broil for 10 minutes, toss, then broil for 5-10 additional minutes, until potatoes are cooked and veggies get golden around the edges.

Mock Sago Panakes
3 T flax meal mixed with 6 T water and set aside until gummy
2/3 c gluten free flour (rice flour based)
3 T tapioca flour
4 T coconut flour
1 T shredded unsweetened coconut
2 t baking powder
3/4 c coconut milk
coriander
chili powder
salt
water to consistency

combine dry ingredients, then add coconut milk and flax goo.
stir and add water until mixture is batter-like and can be spread into a pancake
heat non-stick pan and spray with some cooking oil
heat pancakes for several minutes on each side, until golden.

Serve veggies atop pancakes (eating like a taco is also fun) with green onion and chipotle hot sauce.
