
Difficulty: NEWBIES CAN DO IT
Clean up the Kitchen Vegetable Soup
1 T olive oil
1 onion, chopped
1 clove garlic, minced
3 stalks celery, chopped
1 c matchstick carrots
1 bay leaf
1 can diced tomatoes, with liquid
1 Not Chik'n bouillon cube
1/2 t miso
1/4 t dried basil
Trader Joe's Everyday seasoning (or other favorite seasoning)
Penzey's Mural of Flavor (or other favorite seasoning)
2 1/2 c water
Heat oil in large pot, sweat onions, garlic, celery, and carrots.
Add any other veggies and stuff to clean out the freezer, pantry, or fridge, such as:
Potatoes, peppers, rice, pasta, sausages, beans, peas, corn, limas, broccoli, sweet potato, cauliflower, ANYTHING!
Add tomatoes and water, bay leaf, bouillon, and miso.
Boil until veggies are tender, then remove bay leaf and serve.
