Double Decker Tacos

Difficulty: MEDIUM

Simple Guacamole
1 ripe avocado
1/4 t minced garlic
cumin
lime juice
salt

Simple Relish
1/2 c finely diced red onion
handful chopped cilantro
juice of one lime
salt and pepper

Veggies
1 clove garlic, chopped
2 poblano peppers, sliced
1/2 red onion, sliced
1 c mushrooms, sliced
Olive oil
Taco seasoning
Salsa Lizano (optional)

Turn on broiler to 500 and broil poblanos for 5-10 minutes, until charred. Flip peppers over and do the same for other side until peppers are softened. remove from oven, and once cool enough to handle, cut them open to remove the stems and the seeds inside. Thinly slice peppers and season with salt or Adobo Seasoning

Heat a bit of oil in pan over medium high heat.
Toss in onion and mushrooms and sizzle until golden brown edges appear, add taco seasoning, garlic, and a few drops of lizano (optional). Salt to taste
Stir in peppers and remove from heat

You will also need:
Hard and soft taco shells
refried beans (heat 'em in a bowl in the microwave)
Preheat 325
Heat hard and soft shells for several minutes in oven. They'll start to smell fragrant and corny when they're ready.

Lay out soft tortilla and spread guacamole over it.
Place hard taco shell inside and fill with refried beans and then veggies.
spoon relish over the top.
