Breakfast for Dinner

Difficulty: EQUIPMENT HEAVY

Tofu Scramble
1 T buttery spread
1/2 small onion, finely diced
1/2 pkg tofu, well drained and crumbled
1/4 t garlic powder
1/4 t onion powder
1 t soy sauce
1/4 t turmeric
1 pinch kala namak black salt (optional)
1 T nutritional yeast

melt buttery spread in pan and saute onions until soft.
add remaining ingredients and combine well, cook until heated through.

Sausage Patties
1 tube Lightlife Gimme Lean Sausage
1/2 small onion, finely diced
Handful of fresh parsley and chive, finely chopped
Fresh ground pepper

Place sausage in a large bowl, add onion, herbs, and pepper, then use hands to combine and form into patties.
Spray pan with oil, then sizzle patties for several minutes on each side.
Meanwhile, toast dat toast.

Top toast with vegan mayo, tomato, and pickled red onion. Serve with melon balls.
