Polish Night (Pierogi + Sauerkraut + Kielbasa)

Difficulty: EASY PETE

Pierogi(NOT TESTED)
dough:
1 1/2 c flour
1/2 c water

combine to form dough. Knead for several minutes, then allow to rest while you prepare the filling.

filling:
2 potatoes, peeled, boiled and mashed
1/2 c sauerkraut
1 onion, slightly caramelized
salt and pepper

Mix filling ingredients. Roll out small oblong rounds of dough and add a bit of filling, fold over and crimp shut with a fork.
Heat oil in large saucepan and fry pierogi for about 3 minutes on each side.

Kielbasa (store-bought)
heat skillet and spray with a bit of cooking spray.
bring to a medium heat, and cook kielbasa, rolling frequently to avoid sticking, until heated through.

Assemble pierogi and kielbasa on plate, top with generous pile of sauerkraut or pickled red cabbage.
Microwave whole plate for about 30-40 seconds to get everything warm.
