Portobello Steaks + Baked Potatoes + Roasted Brussels Sprouts

Baked Potatoes
Preheat 425
rub potatoes in olive oil, salt and pepper and wrap in foil.
bake for 50-60 minutes, turning over once midway.
For a pretty potato, slice across, going 3/4 of the way through, before baking
If you are short on time, MICROWAVE. Not as good, but WAY faster.

Roasted Brussel Sprouts
1 bunch Brussels sprouts, washed and thinly sliced
1 onion, sliced
Drizzle olive oil
Sprinkle of sugar Salt and pepper

Prepare to roast in oven when you have about 20 minutes left on the potatoes
Toss sprouts and onions in oil and and seasonings.
Bake, stirring occasionally, until edges are caramelized

Portobello Steaks
2 large portobello mushrooms
2 T olive oil
2 T balsamic vinegar
1/4 t dried thyme
pinch smoked paprika
1 clove garlic, minced
1 T A1 Sauce
1/4 t black pepper

wash mushrooms
place all marinade ingredients in a freezer bag and toss around to combine.
add mushrooms and marinate for about 15 minutes.
heat up griddle or grill and cook for 2-3 minutes on each side.
