Sesame Soba Noodle Lettuce Wraps

Difficulty: NEWBIES CAN DO IT

1 T vegetable oil
1 onion, chopped
1 inch ginger, minced
1-2 cloves garlic, minced
1/2 block extra firm tofu, cubed
ponzu or tamari
1 red pepper, thinly sliced
1/2 c matchstick carrots
1 c shredded red cabbage
3/4 c snow peas, strings removed
1/2 c cashews
a couple drops sesame oil
dash of rice wine vinegar
ponzu/tamari to taste

also prepare:
1 bundle soba noodles, cooked according to package instructions
6-8 butter lettuce leaves, washed and dried
toasted sesame seeds, green onion and sriracha to garnish

heat vegetable oil in very large pan, saute onion, garlic, and ginger.
add tofu and enough ponzu/tamari to season, and heat over high for several minutes
add peppers, carrots, cabbage, snow peas and cashews and continue to stir fry
season with sesame oil, vinegar, and more ponzu/tamari if needed.
remove from heat and stir in soba noodles.
pile veggie noodle mixture in lettuce leaves and top with garnishes
eat like 6 of them because they're lettuce wraps.
