Mango Salsa
1 mango, cubed
1/4 c red onion, diced and lightly sauteed in coconut oil
juice of 1/2 lime
handful of cilantro
1 scotch bonnet pepper, finely diced
salt to taste
combine all and refrigerate for 30 minutes before serving.
Preheat 450
Jerk Cauliflower steaks
1 large cauliflower, sliced into 1 inch "steaks" plus crumbly ends
olive oil
jerk seasoning
salt and pepper to taste
place cauliflower steaks on a foil lined cookie sheet and brush with olive oil, sprinkle both sides generously with jerk seasoning, salt and pepper.
roast for 10 minutes, flip, then continue to roast until cooked through.
Callaloo
1 T olive oil
3 big handfuls of fresh greens, washed and chopped
2 pieces veggie bacon or one large veggie sausage, thinly sliced
2 cloves garlic, minced
1/4 c red onion, chopped
½ t smoked paprika
1/4 t dried thyme
1 can diced tomatoes, drained
Salt and pepper to taste
heat oil in large pan, saute onion, garlic, and bacon/sausage until browning begins.
add spices and tomato, then greens. raise heat and cook until greens are soft and liquid is somewhat evaporated, season to taste.
Plantains
1 very ripe plantain, sliced longways
cooking spray
spray non stick pan with cooking spray, fry plaintain slices for a couple minutes on each side, until golden brown, remove from pan and sprinkle with salt.
Place a big spoonful of callaloo on a plate, top with cauliflower steak, mango salsa, and plantains. Add a bit of scotch bonnet hot sauce and fresh thyme if desired.
