Twice Baked Potatoes + Roasted Red Onion and Radishes

NOT TESTED

3 whole potatoes
1 t chopped fresh chives
1/4 t dried thyme
1/4 t salt
1 clove garlic, minced
2 T vegan sour cream
1 T buttery spread
1 T water
1/4 c vegan cheddar shreds
fresh ground pepper
Chopped fresh chives to garnish

boil potatoes until tender, about 20-25 minutes, meanwhile, make the radishes:

Roasted Radishes
bunch of radishes, washed and quartered
1/2 red onion, roughly chopped
handful fresh parsley, finely chopped
olive oil to drizzle
Trader Joe's Everyday seasoning (or other favorite seasoning)
Penzey's Mural of Flavor (or other favorite seasoning mix)
salt and fresh ground pepper

preheat 400
spread radishes and onion on foil lined cookie sheet, drizzle with oil.
generously sprinkle with herbs and spices, toss.
roast for 10 minutes, stir, then continue to roast until tasty brown edges appear.

Broiler 500
drain potatoes and slice in half longways, scoop insides out into a bowl.
add other ingredients to insides (chive, thyme, salt and pepper, garlic, sour cream and cheeze), then refill "skins" with filling.

place stuffed potatoes under broiler until golden on top, remove and garnish with additional fresh chive.
serve with roasted veg.
