Tofu "Egg" Salad

Tofu "Egg" Salad
1 pkg firm tofu
1/2 stalk celery, chopped small
1/4 c chopped scallions (I've also used fresh onion or onion powder)
1/3 c sweet relish or chopped pickles
1/3 c vegan mayo
1 T dijon mustard
1/2 t apple cider vinegar
1/4 t ground cumin
1/4 t ground turmeric
Salt and pepper to taste
Paprika to garnish

drain tofu and squeeze as much liquid out of it as possible.
crumble into a medium bowl with your fingers to resemble egg crumbles.
add remaining ingredients and mix well.
serve on soft white bread or serve on plate with sprinkle of paprika.
