Difficulty: EASY PETE
2 T extra-virgin olive oil
1 8 oz pkg mushrooms, washed and sliced
1/2 lemon, zested and juiced
1 garlic clove, chopped
1 t dried thyme
2 bay leaves
splash of red wine vinegar
salt and pepper
Heat 1 T olive oil over medium heat in a skillet
Add the mushrooms and cook them for about 3 minutes
Remove from the heat and stir in the lemon zest and juice, garlic, thyme, and bay leaves.
season with salt and pepper.
serve at room temperature.
