Nutty Pâté Vegetable Wraps

NOTE: this recipe requires overnight cashew soaking

Nutty Pâté
1 c walnuts
1/4 c sunflower seeds
1/4 c shredded carrots
1/4 c chopped celery
1/2 red pepper
1 clove garlic
1/4 c chopped pickles
3 basil leaves
small squeeze of lemon juice (you don't want the mix to get too wet)
salt to taste

whir all in a blender, adding lemon juice last to reach desired consistency. If you want to use as a spread/dip it can be thinner, if you want it to hold its shape, use a little less.

Cashew Cream
1 c cashews, soaked overnight
3 basil leaves or any herb you like
1 clove garlic
lemon juice
salt
fresh jalapeno (1 slice for mild, more for added spice!)

Nutty Wraps - ASSEMBLE!
Whole grain tortilla or wrap
lettuce
healthy dollop nutty pâté
top with onion, sprouts, tomato, red pepper, and avocado, etc.
top with a bit of cashew cream, some nutritional yeast, and a few grinds fresh black pepper
