Savory Biscuit Breakfast Casserole

Sweet Potato Hash Layer
1 large sweet potato, peeled and cut into very small cubes
2 T olive oil
2 T chopped red onion
2 T green onions, chopped
1 clove garlic, chopped
1 t smoked paprika
salt and fresh black pepper
1 T chopped fresh parsley

heat oil in pan over medium-high heat. Add potatoes first, letting them sizzle for several minutes to begin browning on edges.
add red onion and garlic, stir, and continue to heat for caramelization. If you need to de-glaze the pan, add small amounts of water.
add paprika, salt and pepper, green onion and parsley, stirring occasionally.
Potatoes will not be fully cooked, but once the edges are nice and brown, remove from heat and set aside.

Sausage Gravy Layer
cooking spray
1 clove garlic, minced
pinch of fennel seed
vegan sausage crumbles
2 T buttery spread or olive oil
1 1/2 c water
grinds fresh black pepper
1 t soy sauce
couple drops liquid smoke
1/2 t dried sage, rubbed
1/4 t onion powder
cornstarch slurry
2 T vegan sour cream

spray pan with oil, add garlic and fennel, then brown your crumbles over medium heat.
Add buttery spread and water and stir.
add pepper, soy sauce, smoke, onion powder and sage. mix a bit of water with cornstarch (until smooth and liquidy) and slowly pour into gravy while stirring constantly. bring to a gentle boil, stirring occasionally until thickened.
Remove from heat and stir in sour cream, set aside.

Tofu Scramble Layer
1 T buttery spread
1/2 small onion, finely diced
1/2 pkg tofu, well drained and crumbled
1/4 t garlic powder
1/4 t onion powder
1 t soy sauce
1/4 t turmeric
1 pinch kala namak black salt (optional -- this salt adds a pungent sulfur flavor that mimics eggs)
1 T nutritional yeast

melt buttery spread in pan and saute onions until soft.
add remaining ingredients and combine well, cook until heated through.

Preheat oven to 400

Biscuit Layer
1 c Bisquick
1/3 c non-dairy milk
mix Bisquick and milk until dough forms.
spray an 8 by 8 casserole dish with oil, then spread biscuit dough as evenly as possible on the bottom.
add the scramble layer, then the sausage gravy, then the potato hash.
bake for 25 minutes, then remove from oven, add a layer of daiya cheddar shreds, then return to the oven for 5 additional minutes.

serve with Cholula and additional green onion.
