Grilled Cheeze + Tomato Soup

Difficulty: NEWBIES CAN DO IT

Grilled Cheeze
Slices of good crusty bread
buttery spread
slices of vegan cheeze (Chao Slices and Follow Your Heart Vegan Cheese are awesome)
optional: roasted jalapenos, pickled red onion, tomato slices, basil, etc. to make it snazzy

Heat skillet over medium low, butter slices of bread.
Place bread buttery side down, add chao slice and fillings, then top with other slice bread.
Flip until golden, crispy, and cheese has melted.

Tomato Soup
1 T olive oil
1 onion, chopped
2 cloves garlic, chopped
3/4 c carrots, chopped
1/2 red pepper, chopped
2 cans diced tomatoes in juice
1/2 c water
Pinch sugar
Salt and pepper to taste
2 T Just Ranch or Just Caesar (optional for extra creaminess)

heat oil in pot and saute onion, carrot and pepper until onions are soft and carrots are golden on edges.
add tomatoes, water, sugar, salt and pepper and bring to a boil, cover, simmer for 10 minutes, then hit it with an immersion blender.
Stir in creamy dressing just before serving.
