Summer Quinoa Salad

1 c quinoa
2 T balsamic vinegar
Zest of 1 lime
1 mango, peeled and diced
1 red bell pepper, diced
1/2 c shelled edamame
1/3 c chopped red onion
1/4 c sliced almonds
1/4 c raisins
2 T chopped fresh cilantro leaves
Olive oil to taste
Salt to taste

Cook quinoa until little tails emerge, drain if needed
allow to cool mostly, then add ask other ingredients.
Chill, then serve.
