Stuffed Acorn Squash + Sausage + Apple + Walnut

Difficulty: HOW MUCH LONGER, MOMMY?

1/2 package Lightlife Gimme Lean sausage (3/4 c crumbled vegan sausage)
cooking spray
1 1/2 c water
1 T olive oil
1 medium yellow onion, coarsely chopped
2 celery stalks, finely chopped
1/2 t dried sage, rubbed
1/2 t dried thyme
2 c bread cubes
1/2 apple, diced
1 sweet potato, microwaved, peeled, mashed
1/2 c chopped walnuts
1/4 c golden raisins
salt and pepper
1 large acorn squash, cut in half and seeded
fresh sage - fried in oil - for garnish (optional)

Preheat 450
brown sausage in a nonstick skillet with cooking spray, set aside
bring water and olive oil to a boil, then stir in onion, celery, sage and thyme, and salt and pepper to make simple broth
cover and boil for 5 minutes, then remove from heat
stir in bread, apple, sausage, sweet potato, walnuts, and raisins

Place squash halves face up, and put a few pats of buttery spread or olive oil on them, season with salt and pepper
pour a bit of water under the squash to help steam them in the oven
cover dish tightly with foil
bake for 30 minutes, then open foil, stuff halves with stuffing, recover, and return to oven for another 45 minutes or until the squash is tender
garnish with fried sage.
