Croque Monsieur & Homemade Potato Chips

Difficulty: BE IN A COOKING MOOD (overnight marinating required)

Hamfu
1 1/2 cups vegan ham broth (I used this product)
1 Tablespoons Tamari
several drops liquid smoke
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 1/2 teaspoons tomato paste
2 Tablespoons real maple syrup
several drops of favorite hot sauce
1 block of tofu, sliced into thin pieces

place tofu in a shallow dish and add tamari, liquid smoke, pepper, garlic powder, tomato paste, maple, hot sauce, then pour broth over until tofu is submerged.
Marinate overnight.

Preheat 375
Spray a foil lined cookie sheet with nonstick spray.
arrrange tofu on cookie sheet and pour additional marinate juice over. spray tops with oil
Bake for 20 minutes, then flip tofu, and bake for another 10 minutes or until golden.

While tofu bakes, prepare roux spread:

Roux spread
2 T buttery spread
2 T flour
small amounts of water
salt to taste
dash of nutmeg

melt butter and add flour, over medium heat, to form roux. add water until you have a good consistency for spreading on bread, season as desired and set aside.

Potato Chips
1 pound russet potatoes, sliced 1/8 inch, rinsed under cold running water and soaked in water for 20 minutes
2 T white vinegar
oil for frying
salt

Drain potatoes. Combine vinegar and 2 quarts water in large saucepan. Bring to a boil over high heat. Add potatoes and cook for three minutes. Drain and spread on paper towel-lined rimmed baking sheet. Allow to dry for five minutes, moving potatoes around to get even drying.

heat fry oil to 325°
Add batches of potato slices and cook, flipping often until potatoes release no more bubbles.
Drain on paper towels and season with salt

Croque Monsieur
spread roux on 2 slices of bread and place both face down in non-stick pan over medium low.
top each with some chao slices, then several slices hamfu
check bottoms until they appear golden, then put em together into sandwich. Microwave for a few seconds if cheeze needs more melting.
serve sandwiches with chips and pickles.
