Sweet Potato Black Bean Stuffed Peppers + Avocado Salad

Difficulty: NEWBIES CAN DO IT

Simple Avocado Salad
1 avocado, cubed
6-8 cherry tomatoes
1 T finely chopped red onion
1/2 c chopped cucumber
olive oil
lemon juice
salt and pepper

combine all ingredients and allow to meld in fridge while peppers are made.

Stuffed Peppers
1 red pepper
1 large sweet potato
olive oil
1 onion
1/4 c black beans
1/4 c frozen corn
handful chopped fresh spinach
2 T salsa
1 T taco seasoning
tofu sour cream (see below) and crispy fried jalapenos for garnish

broiler 475
cut pepper vertically into thirds and clean out seeds
place under broiler until a little charring occurs on the edges
microwave sweet potato until tender, then peel and chop
heat oil in pan and saute onion, add taco seasoning
add sweet potato, black beans, corn, spinach and salsa and mix until heated through

Tofu Sour Cream
1/4 package silken tofu
1/4 T olive oil
2 t lemon juice
1/2 t apple cider vinegar
1/4 t sugar
pinch salt

combine all ingredients.

when peppers come out of broiler, switch broiler off, then stuff peppers with filling, and top with daiya cheddar
place back in turned off oven for several minutes until cheeze is melty.
garnish with sour cream, taco seasoning, and fried jalapenos. Serve with avocado salad
