2 heads broccoli florets
3/4 c matchstick carrots
3/4 c chopped celery
1 onion, roughly chopped
2 T olive oil
favorite herb mix
salt and pepper
cheezy sauce
2 T non-dairy butter
2 T flour
1 c non-dairy milk
1 c water
½ t garlic powder
¼ t turmeric
¼ t paprika
1/4 t mustard powder
Several drops liquid smoke
Several drops vegan Worcestershire
¼ tsp salt
2 T nutritional yeast
1/2 T chickpea miso
Preheat 400
toss carrots, broccoli, onion and celery with olive oil, herbs, and salt and pepper and roast for 10 mins, toss, 10 more minutes, then set aside
To make sauce, melt butter and briefly fry flour, then add liquid and stir.
Add remaining ingredients and simmer until thickened.
Mix dry amaranth into sauce
Reduce the oven heat to 350 degrees combine roasted veggies and sauce in a 9-inch square baking dish, and bake, covered, for 25 minutes.
breadcrumbs
1/2 T vegan butter
1 clove garlic, minced
3/4 sleeve ritz crackers, crushed (or stale bread)
melt vegan butter in pan and add garlic, then add ritz crumbs and toss for 3 minutes until browned and crispy then remove from heat
Remove foil and sprinkle the surface of the casserole with vegan cheese (optional), place under broiler until golden and crispy.
Remove from oven and sprinkle the breadcrumbs on top.
Allow to cool for 10 minutes before serving.
