Cilantro Lime Summer Rolls

Difficulty: NEWBIES CAN DO IT

Special Menu: LOW CAL - 340 calories for 3 wraps

Cilantro Lime Soy Curls
1/2 pkg soy curls, soaked for 10 minutes, then drained
1 T peanut oil
1 clove garlic, minced
2 T ponzu
1/4 t cumin
juice of 1 lime
handful fresh cilantro, chopped
salt and pepper to taste

heat oil and saute soy curls for 5 minutes. Add ponzu and cumin, then remove from heat and stir in lime juice and cilantro. Set aside.

Prep fillings
have all your veggies prepped and laid out, and your soy curls cooked and cooled slightly before starting your summer roll assembly:
carrot sticks
cucumber sticks
red pepper sticks
avocado slices
crushed peanuts
more lime juice
cilantro
corn
red onion
anything you like

6 rice paper sheets

dunk rice paper sheets one at a time into a bowl of water, submerging for about 5-7 seconds, then lay flat on a plate. The sheet wont be totally malleable right away, but by the time you place your fillings it will absorb more water and become soft and sticky.
Place fillings inside, you can be generous since the wraps are sticky they hold fillings well. Fold up one edge, then the two opposing sides, then roll (like a burrito).
Serve with more ponzu for dipping.
