Ramen + Sesame Greens + Garlic Snap Peas

Filets & Spicy Sweet Potatoes
Preheat 425
Spread one peeled and cubed sweet potato on a foil lined cookie sheet with oil, salt and Nanami (Shichimi) Togarashi. Roast 11 min, toss, 11 more mins.
Simultaneously on another foil lined cookie sheet, bake Gardein Fish Filets for 11 minutes on each side until crispy.

Ramen
Prepare 3 packs Instant Ramen
bring 2 cups of water to a boil, and add seasoning packet
add noodles when other components are nearly done and cook for 3 minutes

Sesame Greens
2 t vegetable oil
1 inch ginger, peeled and minced
3-5 leaves de-stemmed and chopped collard greens
1/4 c ramen broth from the pot
a few drops sesame oil
1 t soy sauce
1 tablespoon toasted sesame seeds

Heat oil over high heat and saute ginger, then add greens and broth.
heat until greens are tender, then season with sesame oil and soy sauce, and toss with seeds

Garlic Snap Peas*
2 cups sugar snap peas
vegetable oil for frying
salt and pepper
2 cloves garlic, minced
*saute any other vegetables you want to use along with snap peas

heat oil over high heat and stir fry snap peas.
add salt, pepper and garlic when there are only a couple more minutes of cooking needed.

Serve Ramen with snap peas, greens, and filets laid on top, then add whatever other toppers you want: toasted sesame seeds, sauteed carrots, yellow pepper, cilantro, corn, tofu, etc.
