Kimchi Cauliflower Fried "Rice" + Gochujang Tofu

Gochujang Tofu
1 block extra firm tofu, pressed, cut into cubes
peanut oil
1/4 c gochujang

heat oil in pan over medium heat, then fry tofu until golden
pour in gochujang and continue to heat until sauce is well adhered to tofu

Cauliflower Rice
1 head cauliflower, leaves and core removed, broken into medium pieces
1/2 c carrots

using the shredding blade on your food processor, add cauliflower chunks and carrots until you have a "rice"
dump mixture out on paper towels to absorb some of the moisture while preparing other ingredients

peanut or coconut oil
1 inch ginger, peeled and minced
2 garlic cloves, minced
1 onion, minced
2-3 T soy sauce or tamari (depending on how much cauliflower you have)
1/2 c kimchi, chopped
1/2 c chopped green onion
salt and pepper to taste

heat oil in very large pan, and saute ginger, garlic and onion until fragrant
add cauliflower and carrot shreds, and cook over high heat
add tamari, kimchi, and green onion, and cook until well heated
season with salt and pepper to taste

serve "rice" topped with tofu and additional green onion and kimchi.
