Jamaican Patties + Jerk Calabaza

Difficulty: HOW MUCH LONGER, MOMMY?

First, boil 1 cup dry lentils until tender.

Dough
2 c flour
1 t salt
1 t annatto
1/2 c shortening
1/4 c plus 1 tablespoons cold water

heat shortening in small saucepan and add annatto seeds. heat until oil has picked up reddish color. Place flour and salt in a bowl, then pour the melted shortening over a sieve to remove the annatto.
mix by hand, adding cold water slowly until flakey dough is formed. Form into a disc, wrap in plastic wrap, refrigerate.

Filling
1 tablespoons vegetable oil
1 small onion, finely chopped
3 cloves garlic, minced
1/2 T fresh ginger, grated
cooked lentils
1/8 t ground annatto
1/2 t ground cumin
1/4 t ground allspice
1/4 t ground cardamom
1/4 t thyme
1 large tomato, chopped
3/4 t salt
Freshly ground black pepper
1/3 c water

heat oil in large pan and saute onion, garlic, and ginger until fragrant.
add lentils, spices, tomato, salt, pepper and water, and simmer until liquid is absorbed.

Preheat 400

Assemble Patties
roll out dough into 7 inch rounds, and place spoonful of filling on top.
fold over, and crimp closed using a fork. brush with Vegg wash (egg yolk replacer + water) if desired.
bake for 30 minutes until golden brown.

Jerk Calabaza
1 pumpkin, peeled, seeded, and cut into 1/2 inch cubes
olive oil
jerk seasoning (see below)

arrange pumpkin cubes on foil lined cookie sheet and toss in olive oil and plenty of jerk seasoning. roast for 20 minutes, tossing once.

Jerk Seasoning
1 T garlic powder
2 t cayenne pepper
2 t onion powder
2 t dried thyme
2 t dried parsley
2 t sugar
2 t salt
1 t paprika
1 t ground allspice
1/2 t black pepper
1/2 t dried crushed red pepper
1/2 t ground nutmeg
1/4 t ground cinnamon
