Brined Seitan
1 pkg seitan, drained and rinsed
corned beef pickling spice
spice bag
water
1/2 t salt

Place a tablespoon or two of pickling spice in spice bag and set in a bowl. place seitan on top, add salt and cover with water. allow to brine overnight.
When ready to serve, place seitan and about 1/2 cup of the brine in a saucepan and simmer until liquid is absorbed/seitan is slightly dried.

Russian Dressing
2 T just mayo
2 t ketchup
2 t chopped capers
1 t relish
ground pepper

You will also need:
buttery spread
Favorite Sauerkraut
Vegan cheeze slices
Rye pumpernickel swirl bread
pickles

Heat non-stick pan over medium
spread bread slices with a bit of buttery spread and grill in pan with cheeze slices between (like a grilled cheeze)
once cheeze is melty, open the sandwiches back up and pile up seitan, sauerkraut, and Russian dressing.
serve with pickles, preferably Sideburns.
