Preheat 450
*soak 1/2 c sun dried tomatoes (dry, not oil packed) in hot water
Cauliflower steaks
1 large cauliflower, sliced into 1 inch "steaks" (don't throw out end pieces)
Beano's White Pizza Sauce (or you can use olive oil and dried oregano)
salt and pepper to taste
place cauliflower steaks (and end pieces) on a foil lined cookie sheet and brush with sauce/oil, sprinkle both sides generously with salt and pepper.
roast for 10 minutes, flip, then continue to roast until cooked through.
Italian Sausage mixture
1 T olive oil
1 clove garlic
1 small onion, chopped
1/4 red pepper, chopped
2 c fresh spinach, kale, broccolini or zucchini, chopped
2 Tofurky Italian Sausages, sliced
*1/2 c sun dried tomatoes (not oil packed), soaked in hot water to soften
a bit of Beano's White Pizza Sauce (or you can use olive oil and dried oregano)
optional garnishes: toasted pine nuts, crushed red pepper, shakey cheeze, pan fried sage
In large skillet, saute onion and peppers in olive oil, then toss in chopped green vegetables, garlic,and sausage slices.
Saute until greens are cooked and sausages are heated through.
Drain and add sun dried tomatoes to sausage mixture.
drizzle with a bit of the white pizza sauce to taste
Place Cauliflower steak on plate and top with a spoonful of the sausage sun dried tomato mixture. serve with garnishes.
