Chive Cream Stuffed Tomatoes

Difficulty: NEWBIES CAN DO IT

1 c raw cashews
8 ounces tofu
3 garlic cloves (1/2 package)
2-3 T lemon juice, additional to reach desired thickness
handful fresh chives
handful fresh parsley
2 green onions
1/2 teaspoon salt
1/4 teaspoon ground black pepper

cherry or grape tomatoes, bottoms and tops trimmed, seeds somewhat scraped out.

Whir cream in food processor until smooth. put filling in a piping bag, preferably with a pretty tip (you can also use a baggie with the tip snipped).

garnish with chive.
