Brown Rice
1 1/2 c brown rice
3 c water
1 t salt
1 T olive oil
2 bay leaves
chopped cilantro
lime juice
Bring all ingredients to boil, cover, reduce heat to simmer, cook until water is absorbed.
remove from heat and stir in chopped cilantro and lime juice
Cooked Vegetables
1 orange pepper, chopped
1 c frozen corn
1 clove garlic, minced
1 T olive oil
1/4 t cumin
Several pinches salt
Heat oil in skillet, add peppers, garlic, and corn, salt and cumin.
cook over high heat until corn and peppers start to brown.
Toppings
Black beans
Red onion
Avocado mashed with lime juice, cumin and salt
Tomato mixed with fresh garlic, salt and pepper
Lime juice
Pile everything up as desired!
