Olive oil
½ pkg fakin’ bacon
3 cloves garlic, chopped
2 T parsley, chopped
¼ t celery seed
2 c water
2 potatoes, peeled and chopped
1 can peeled tomatoes with juice
Black pepper
bay leaf
1 tablespoon Vegeta
1 can kidney beans
1 can Chickpeas
1 c sweet corn
Saute bacon, garlic, parsley, and celery seed for several minutes.
In a large pot, add water, tomatoes, potatoes, pepper, bay leaf, and Vegeta and bring to a boil.
Reduce to simmer for about 15 minutes, then add beans, chickpeas, and corn, then simmer for 5-10 more minutes.
Season with salt if needed.
