Portobello Steak Wraps

Difficulty: MEDIUM - requires cashew soaking a garlic roasting

Special Menu: LOW CAL - approximately 250 calories per serving

Roasted Garlic
Preheat 400
First, roast a whole head of garlic by slicing off the very top of the head, and placing in a foil pouch with a drizzle of olive oil.
Roast for 35-40 minutes

Garlic Dressing
1/2 c cashews, soaked and drained
1 head roasted garlic (soft garlic can be squeezed out)
1 clove fresh garlic
2 T capers
1/2 teaspoon salt
1 T nutritional yeast
1 T olive oil
1/4 cup fresh lemon juice
3/4 cup water, more to reach desired consistency
pepper to taste

"Steak" Marinade
3 large Portobello mushrooms
2 T balsamic vinegar
1/4 t dried thyme
pinch smoked paprika
1 clove garlic, minced
1 T A1 Sauce
1/4 t black pepper

wash and slice mushrooms and toss everything in a freezer bag to marinate for about 15 minutes.

1 red pepper, sliced
1 medium onion, sliced
marinated mushroom slices
cooking spray
salt and pepper to taste

Heat a large saute pan with cooking spray over high heat.
Saute peppers, onions, and mushroom slices, season to taste.

ASSEMBLE!
lay out wrap (for low calorie, I like to use Tumaro's Wraps)
add a handful of spinach, a drizzle of sauce, and the mushroom mix.
wrap and feast - garlic breath forever. <3
