Avocado + Black Bean + Corn Quesadillas + Strawberry Arugula Salad

Salad
1 pkg arugula
1 c strawberries, washed, trimmed, and sliced

Cumin Lime Vinaigrette
juice of 1 lime
1.5 T champagne vinegar
1 garlic clove, minced
1 t cumin
1 t Dijon mustard
¼ cup canola oil
¼ cup extra virgin olive oil
salt and pepper

combine all ingredients and whisk well. toss arugula and sliced strawberries with vinaigrette just before serving.

Quesadillas
1/2 T olive oil
3/4 c corn
pinch cumin
2 avocados, mashed
1 handful cilantro, chopped
1/2 c black beans
1 clove garlic, minced
salt and pepper
lime juice
3 large tortillas

heat oil in small pan and saute corn over medium high heat, season with a bit of cumin, salt and pepper until golded brown town shows up, set aside to cool slightly.

in a bowl, combine avocado, beans, cilantro, garlic, and a squeeze or two of lime juice.
add corn, season with salt liberally to taste.

heat a non-stick pan to medium with a bit of cooking spray.
spread avocado filling on tortilla, fold in half, and heat on pan until crispy, then flip and heat other side until crispy.
cut into triangles, serve with salsa.
